It’s no secret that carbon dioxide (CO2) is the magic ingredient that gives our beers, soft drinks and, especially at this time of year, our glass of bubbly that all important fizz. However, looking beyond the fizz, one New York-based company is now using CO2 to make carbon-negative vodka.
Air Company is the firm behind this impurity-free spirit that was first unveiled in 2019. Called AIR Vodka, the alcohol is created by using a unique process that produces impurity-free ethyl alcohol from CO2. With only three inputs required – air, water, and sun – the process offers yet another alternative route to addressing climate change.
While the carbon-negative vodka isn’t the only product Air Co offers, it has proved hugely popular. At the time of writing, if you visit the company’s website its $75-a-pop alcohol is sold out, with restock of the 750ml bottle coming soon. To ramp up production of the liquor and much more besides, Air Co earlier this year (April 2022) formalized plans to construct its third facility in the US .
