In the ever-developing food and beverage industry, liquid nitrogen – a cryogenic liquid – continues to be a popular and quirky idea used to grab consumers’ attention. Cocktails, ice cream, nitro-popcorn and Dragon’s Breath are just some applications for the liquid nitrogen in the industry.
Liquid nitrogen is used to instantly freeze food and drinks. As it evaporates, the liquid nitrogen freezes everything around it, including tissues that come into contact with it. Although pleasing to the eye, the misty or smoke-like vapor that the liquid nitrogen gives off exposes potential health and safety risks.
Beyond the smoke like vapor, liquid nitrogen also allows professionals to create unique textures with foods which would otherwise be difficult to create using traditional freezing methods. Liquid nitrogen also has the ability to quickly freeze foods meaning the process can be improved due to the product not needing to spend long periods of time in conventional freezers.
